- Health status
- No seafood allergy
- Nancy city residents
Exclusion
- Recent gastroenteritis (\<6 months)
- Fragile health person proximity
- Oysters consumption during the study
- Pregnancy or breastfeeding
- "nonsecretor" phenotype
